Our culinary experience offers more than just a meal; it’s a journey into the rich and often forgotten flavours of our region’s exceptional ingredients. We don’t adhere to the trends of “haute” or “nouvelle” cuisine; instead, we embrace the essence of our land and sea.
Here, we cultivate a bounty of vegetables, fruits, and nuts, pressing our own olive oil and baking bread from ancient grains grown on our soil. Our pigs roam freely through oak forests, while goats and sheep graze on the Mediterranean bush. Alongside our cultivated crops, wild edible plants and mushrooms flourish, adding depth to our dishes. We prioritize organic and biodynamic practices, fostering biodiversity by allowing wild plants to thrive alongside our harvests.
From cured meats made from acorn-fed pigs to homemade jams and preserves, our kitchen celebrates the abundance of our surroundings. We source milk and meat directly from local shepherds who tend to goats, sheep, and cattle on our land, crafting artisanal cheeses that capture the essence of our terroir. And occasionally, we venture into the wild to hunt a wild boar, further connecting to the natural rhythms of our environment.

Our beverage selection boasts exceptional quality, featuring our own Jacine Pinot Noir, San Fantino Rosso, and a variety of impressive whites and rosés. For non-alcoholic options, enjoy invigorating lemonades and herbal teas infused with wild-grown mint, chamomile, and elderflower. Indulge in our homemade specialties like limoncello, walnut liqueur, and myrtle liquor. And for a classic Bloody Mary experience, savour the robust flavour of our freshly pressed tomatoes.
